Vegan Recipe: Black Bean & Mushroom in Garlic Sauce

More recently, individuals have sought to pay keen attention to their health and longevity. So that means what is going in your tummy is undoubtedly important.

It is good to eat from what will allow your body to absorb vitamins, minerals and fibre for optimum function.

At least having between one to three meatless meals a week will definitely give you all the right minerals, vitamins and fibre that you need.

Here’s a recipe that you would love!

Black Bean & Mushroom in Garlic Sauce Ingredients: Servings of 3-4 Persons

  1. 3/4 Cup of Olive Oil
  2. 1/2 Cup of Black Beans
  3. 4-5 Diced Garlic Cloves
  4. 1/2 Cup of Chopped Onion
  5. 1/2 Cup of Sweet Peppers
  6. A pinch of Salt
  7. A dash of Pepper (Cayenne, Crushed Sundried Peppers or any Pepper to your liking.)
  8. 6 Medium Sliced Mushrooms

Method: Soak Black Beans overnight. Let it soak between 10-15 hours. Put to boil for 10-20 minutes or just boil until tender. Unless you are using a pressure cooker; then limit time to 10 minutes. Heat frying pan and add 3/4 cup of olive oil (or any oil you have available).

After the oil is heated sauté onions, garlic and sweet peppers. Then add the mushrooms. Sautee mushrooms until tender. Add Black beans then cook to simmer. Add salt and pepper to taste (or any herbs and spices available to you). Finally, simmer everything for 10 minutes. Serve with rice and peas and your favorite drink!
