Vegan Recipe: Island Medly

Here’s a recipe that I created the other day. Honestly this was made on impulse using what was available in my kitchen LOL.


  • 1) 1 1/2 Cup of Black Beans
  • 2) 1 1/2 Cup of Sweet Yellow Corn (Canned or Organic)
  • 3) 2 Chopped Carrots
  • 4) 1/2 Diced Onion
  • 5) 1/2 Diced Green Bell Peppers
  • 6) 1/2 Cup of Water
  • 7) A pinch of Salt
  • 8) A dash of Black Pepper
  • 9) 3/4 cup of Olive Oil

Method: Soak Black beans overnight for 8-10 hours. After wash off beans until ready for cooking. If you’re using canned sweet corn, wash off corn. But if you’re using organic corn, use a knife to strip the corn grains. Then put to soak for 1 to 3 hours. Strip the outer layer of corn. Chop carrots to a size of your liking.

Preheat cooking pan for 2-3 minutes. Add Olive oil. Fry seasoning for 2 minutes. Then add black beans, sweet corn and carrots. Pour water into pot. Add Salt and Black Pepper to taste. Simmer for 5 minutes. Voila! Your meal is complete! This has a serving size of 2-6 individuals. Pair with your favourite staple whether it be quinoa, rice or ground provisions. Enjoy! 🙂
